
Crimson Winter Salad
Grey Winter days, call for colourful, seasonal food. This quick and simple side salad, is crisp and tangy. I served it with warm salmon and a green leafy salad.

INGREDIENTS
1/4 red cabbage
1 beetroot
1 red apple
1/4 red onion, sliced
1 tablespoon fresh dill, finely chopped
1 tablespoon balsamic vinegar
a little salt to taste
METHOD
Place the onion in a little bowl and cover with balsamic vinegar for about 10 minutes. This will take away the harshness of raw onion.
Slice the cabbage finely (I used a food processor) and place in a big bowl.
Coarsely grate the beetroot and apple and add to the bowl.
Sprinkle with fresh dill and a pinch of salt
Add the onion and mix thoroughly
Taste and if wished, add the leftover balsamic
Sprinkle with a little more dill and serve
STORAGE
Stores well in the fridge for about 4 days
