We've had some gorgeous September sunshine for the last few days, so I'm making the most of it and imagining that I'm having lunch at a little taberna on the Spanish coast.
I kept this dish simple, by using ready cooked seafood (mussels and prawns), and the only cooking I did was to prepare the marinade. The seafood bathed in this marinade overnight, which had two benefits, the first being that it developed more flavour and the second meant that all I had to do at lunchtime, was to toast some dark sourdough, mash half an avocado and top with the seafood mix.
So, what about the health benefits? Mussels are very often overlooked, but they are packed with nutrients, in particular: protein, iron, B vitamins, choline, vitamin E, magnesium, manganese, selenium and zinc.
